The purpose of this program is to prepare students to pursue a career within the hospitality (commercial kitchen) industry, and more specifically to students willing to attain an Australian nationally recognised qualification in commercial cookery. The program provides learners with the necessary skills and knowledge to undertake commercial cooking activities in restaurants, hotels, clubs, pubs, cafés, and coffee shops.

- SIT40521 Certificate IV in Kitchen Management
- SIT50422 Diploma of Hospitality Management
- or any other Diploma level qualification with the SIT Tourism, Travel and Hospitality Training Package.
Employment Pathway:
All candidates are provided with advice on employment and training options throughout the delivery of the program.
Once students have successfully completed SIT30821 Certificate III in Commercial Cookery, they can apply for jobs within the hospitality industry which can include chefs at restaurants, hotels, clubs, pubs, cafés, and/or coffee shops.

Part of this program includes the units SITHCCC034 – Work effectively in a commercial kitchen, and SITHCCC043 Work effectively as a cook, which require you to safely and hygienically prepare, cooks and present menu items for food service periods that could cover:

Recognition of Prior Learning (RPL)/Credit Transfer (CT)
Melbourne College of Business and Technology (MCBT) will offer Recognition of Prior Learning (RPL) and Credit Transfer (CT) to all prospective students through the enrolment process. Entry Requirements International Students
Admission to the Institute is based on academic merit.
- The students must have successfully completed year 12 or secondary studies in their home country equivalent to an Australian Year 12.
- Have demonstrated an IELTS level of at least 5.5 or equivalent or the successful completion of at least General English Upper Intermediate or English for Academic Purposes Upper Intermediate level.
- Have a suitable level of language, literacy, and numeracy to complete course requirements with or without additional support that Melbourne College of Business and Technology is able to provide.
You do not need to provide evidence of an English test score with your visa application if one of the following applies:
- you are a citizen and hold a passport from the UK, USA, Canada, NZ, or the Republic of Ireland
- you are an applicant who is a Foreign Affairs or, Defence sponsored student or a Secondary Exchange student (AASES)
- you are enrolled in a principal course of study that is a registered school course, a standalone English Language Intensive Course for Overseas Students (ELICOS), a course registered to be delivered in a language other than English, or a registered post-graduate research course
- you have completed at least 5 years study in English in one or more of the following countries: Australia, UK, USA, Canada, New Zealand, South Africa, or the Republic of Ireland in the 2 years before applying for the student visa, you completed, in Australia and the English language, either the Senior Secondary Certificate of Education or a substantial component of a course leading to a qualification from the Australian Qualifications Framework at the Certificate IV or higher level, while you held a student visa.
